You will notice that I forgot the popsicle sticks the first time, don't make the same mistake as me!

Well, it's officially reached 90 degrees here in northern CO and let me tell you, that is HOT for here. I made some yum yummy chocolate covered bananas featuring nourishing coconut oil.
You will need:
-6 Bananas
-1/4 cup unrefined (organic) coconut oil
-popsicle sticks
-1 cup bittersweet chocolate disks/chips/flakes (at least 85% Cacao)
-fun stuff to roll them in (I used shredded unsweetened coconut and walnuts)
1) It is VERY important that you freeze the bananas first! I cut mine in half and then stuck the popsicle sticks in them and froze them.
2) Using a double boiler, or a stainless steel bowl sitting on top of a pot of simmering water, put the coconut oil in the bowl. Once the coconut oil is warm add the chocolate. Stir until the chocolate is melted. Remove from heat.
3) Pull frozen bananas out of freezer and dip into the chocolate. The chocolate will harden when it touches the cold banana, (I like to make 2 layers) quickly remove the banana and roll it in the shredded coconut then set on another plate and back into the freezer, or your mouth!
This chocolate "shell" works well with any frozen delight including ice cream, frozen fruits and popsicles!
